The famous sherry vinegar is a Protected Designation of Origin* of South-West Spain.

It has a complex flavour that combines acidity with hints of caramel and oak.

The Sherry Vinegar is Caoba (Mahogany) coloured due to long oxidation periods and old wines used in the processing. The final product presents a great aromatizing power.

Use it to enrich any dish, as an alternate to lemon, marinades, sauces.

* D.O.P. stands for Denominación de Origen Protetta (Protected Designation of Origin P.O.D.).

It is assigned by the European Union to indicate a product that owes its characteristics to its place of origin and its production. The production processes occur within a specific geographical area.

Verification of compliance with the production specifications is done by impartial parties recognized by the Ministry of Agricultural, Food and Forestry Policies.

Sherry or Jerez in Spanish is a fortified wine made from white grapes grown near the city of Jerez de la Frontera in Andalusia, Spain.

Sherry vinegar or vinagre de Jerez in Spanish is a gourmet wine vinegar made from sherry. It is produced in the Spanish province of Cádiz and inside the triangular area between the City of Jerez de la Frontera and towns of Sanlúcar de Barrameda and El Puerto de Santa María, known as the “sherry triangle”.

The production and quality of Sherry Vinegar is monitored and controlled by the Consejo Regulador and has its own Denominación de Origen, which is protected by Spanish and EU law.

Aging – The Solera Process

The young, new vinegar ages through the solera process.

Old oak sherry barrels are stacked three or more layers high. The new vinegar goes into the top row of barrels and moves to lower barrels as it ages.

As an ageing vintage moves down a tier, a small amount remains behind in the barrel to blend with the next vintage.

In each transfer, the vinegar blends with older vinegar, giving it a more consistent and complex flavour.

Bottling begins with the oldest barrels. Younger vinegar, from the tier above, replaces the removed sherry vinegar and continues to age.

It is a continuous process over generations, mixing newer and older vintages. This produces a distinct, complex flavoured product that is consistent in quality and taste.
