The Vinegar Factory Balsamic Vinegar is made by heating the juice of freshly harvested grapes to a concentrate. This is called “grape must”.
The concentrated “must” is then mixed with older vintage vinegar for the acidification process. This adds to the consistency of the taste and texture of the vinegar.
To produce the Caramelised Balsamic vinegar, the “must” is further “reduced” (heated further to allow caramelisation). The resultant Caramelised Balsamic vinegar is thick and rich.
Use it as a marinade, in your soup, vegetables, dips and sauces and even to add a dash of spark in your cocktail!
